100% Cabernet Sauvignon. No maceration. 7-8 days of fermentation outside in open fiber tank. Afterwards Freedom of Peach was in INOX until the 14th of April 2015, when it was bottled. 13,6% alc.
Si, C'est rare
100% Syrah. 15 days of maceration outside in fibre cuve. After maceration the juice, from the press, went directly in barriques until Si c’est Rare was bottled around the 1st of May, 2016. 13% alc.
100% Syrah. 15 days of maceration outside in fibre cuve. After maceration, only the free run juice of Moonologue was left to age in an oak foudre. Moonologue was in the foudre until soutirage. Bottled the 11th of April 2015. 11,2% alc.
